Classic Potato Salad
This is a classic potato salad recipe. As always, ingredients can be modified to taste.
2 pounds potatoes, peeled and cut into 3/4 inch chunks
1 cup Mayonnaise
Salt & Pepper to taste
3 tablespoons vinegar
1 teaspoon sugar
1 stalk celery, thinly sliced
1/2 cup chopped onion
2 hard-cooked eggs, chopped (optional)
1. Cover potatoes with water in large pot.
2. Bring to a boil.
3. Reduce heat and simmer until potatoes are tender.
4. Drain and cool slightly.
5. Combine mayonnaise, salt, and pepper, vinegar, and sugar in large bowl.
6. Add potatoes, celery, onion and eggs and toss gently.
7. Cool in refrigerator.
