Rich Sweet Potato Casserole
This is a wonderful Sweet Potato Casserole that you will love!
6 pounds sweet potatoes, cooked and peeled
1/3 cup maple syrup
1/3 cup heavy cream
1/4 cup butter, softened
1 egg, beaten
A pinch of salt and pepper
1/4 cup butter
1/4 cup brown sugar
1/3 cup pecans, chopped
2 tablespoons heavy cream
1.Grease a large baking dish.
2. Combine sweet potatoes, syrup, heavy cream, butter, and salt and pepper in a large bowl. Use a potato masher or electric mixer to mix ingredients until somewhat smooth.
3. Spoon ingredients into greased pan.
4. To make topping, melt butter in medium size saucepan.
5. Stir in brown sugar, pecans, and cream.
6.Spread evenly over sweet potatoes.
7.Bake uncovered about 45 minutes at 350°
