"Rosa's Authentic Mexican Salsa" is the Real Deal!
It is one of my favorite recipes
that has a story of a real person named Rosa.
This is a great recipe with a story. In the late 1970's I lived in San Diego. There was an aquaintance who had a family house down in Rosarito Beach, Mexico. One weekend everybody piled down there for a get-together. There was a woman named Rosa who did all the cooking that weekend. She was a local Mexican lady who didn't speak any English but she sure could cook! She showed me what she put into her salsa. This was before you could find much ready made salsa. It is a basic recipe that is always great to have around.
3 Large tomatoes
1/4 cup onion
1/4 cup cilentro
2 cloves garlic
1 jalapeno pepper
2 tablespoons lime juice
Dash of salt
Chop tomatoes, onion, cilentro, garlic cloves and jalapeno pepper. You might want to start with only half the pepper so you don't hurt yourself. If you leave the seeds in, that also adds more heat. Add lime jusice and salt to taste. Eat with your favorite tortilla chips or any mexican dish.
